I assumed this was like starting a company

On the registration form you immediately decide your tax regime, your VAT status, and your insurance status: all three generally apply for the whole tax year.
If you're VAT-liable, the law requires at least one domestic payment account, which you must open within 15 days of receiving your tax number.
You have to register for local business tax separately, with the municipality where your business is registered, within 15 days of starting the activity.
